Why Huila is a coffee top‑region
This region is a real powerhouse of Colombia. The mountains act like a natural climate control for the coffee trees. Volcanic soils are so rich that every bean absorbs the energy of nature. Sunny days and cool nights create the perfect formula for slow, full ripening of coffee cherries.
The El Diviso farm and Nestor Lasso
El Diviso is a family business with serious ambitions. Nestor Lasso, the owner and a coffee genius, combines tradition with scientific approach and adds a sprinkle of crazy experiments. For years the farm has focused on producing micro‑lots, refining fermentation and drying methods. Nestor’s approach makes the coffee complex, layered, and yet friendly no matter the brew method. The result — a coffee that has already captured the hearts of roasters and coffee lovers around the world. And now it’s with us, to conquer yours ;)
Ombligon — a rare Arabica variety
Ombligon is considered related to Ethiopian heirloom varieties; some local Colombian specialists assume it may have arisen as a natural mutation of Pacamara, Bourbon or Castillo. It’s resistant to coffee leaf rust, gives high yields, and has scaling potential, but for now is available only among a narrow circle of producers.
At first glance, growing it seems easy, but its peculiarities create challenges and open room for experiments in processing. The large beans require care: the depulper incorrectly set can damage them, and even a small difference in temperature or oxidation duration can radically change the flavor profile. Control over every stage — from harvest to drying — is critically important, because it determines which characteristics will be maximally expressed in the finished bean.
So yes, Ombligon’s processing methods are a true playground for experiments:
after careful harvest mostly overripe cherries are selected (Brix 24–26°Bx);
cherries are put in bags and left to oxidize for 48 hours; then a rest of 12 hours and another 60 hours of oxidation;
after that the bags are opened to increase internal temperature;
cherries are washed in water at 32 °C to reduce temperature difference between cherries and water;
cherries are placed in hermetic plastic containers for anaerobic fermentation;
after that washed in water at 60 °C to stop fermentation, and dried using special equipment.
Why everyone is talking about this variety
Ombligon has high yield and disease resistance, and most importantly — it produces vibrant flavor profiles which appeal both to professionals and coffee fans. After WBC 2023 this variety came into the global spotlight. Its potential is huge, but it is still grown only in Huila, which makes it even more exclusive. For many farmers, growing and processing new varietals always involves risk. For more producers to start working with Ombligon, they need proper support and access to resources.
WBC 2023 and the fame of Ombligon
This lot was spotlighted at the 2023 World Barista Championship. For example, Australian Jack Simpson, who won third place, used Ombligon in three disciplines — espresso, milk drink, and signature. Coffee pros describe Ombligon’s flavor as raspberry, guava jam, mango and white chocolate. Jack sensed even more: red cherry, sanguine orange, watermelon, yellow peach, orange marmalade, dark chocolate and even toffee.
