The La Loma farm in the Huila region is a project by Rodrigo Sánchez, a coffee innovator who grows Pink Bourbon, Laurina, Gesha, and other varieties.
The highlight of this lot is Carbonic Maceration — the coffee cherries are fermented in CO₂-filled tanks for up to 188 hours. Borrowed from winemaking, this method enhances the fruitiness and sweetness, creating a rich and deep flavor profile. After fermentation, the beans are slow-dried for 18–22 days to preserve their full aromatic complexity. The result is a clean, layered coffee with an experimental vibe — perfect for both newcomers and seasoned tasters.
