On the nose — cane sugar and yellow plum. On the palate — quince, caramelized apples, and dry plum wine. The aftertaste is caramel-like with a warm finish. The body is medium.
This arabica comes from Mantiqueira de Minas, a top-tier Brazilian region where the coffee is grown at 1090–1280 meters above sea level. Processing — natural anaerobic, meaning the beans were fermented without oxygen, giving the coffee its rich, deep profile.
The Capadocia farm is owned by Augusto Borges Ferreira — a fourth-generation coffee farmer. He renamed the farm in honor of the Turkish Cappadocia, believing that coffee, like a hot air balloon, opens up new horizons.
