The Tres Rios region, where this outstanding coffee is grown, is known for its misty mountain clouds, volcanic soils, and a long history of coffee cultivation. This particular berry-forward lot comes from the Garcilaso farm, managed by Alisa Soto. Alisa has truly breathed new life into the farm, transforming it into a place rooted in sustainability and quality. No insecticides, respect for the ecosystem, bees being nurtured — a place where coffee genuinely grows with love. Total vibe :)
For the Red Honey process, about 50% of the cherry’s pulp is left on the bean. This allows the coffee to absorb more sweetness and fruity notes, especially from the cherry. The beans are slow-dried under the sun for several days and hand-turned regularly to ensure even drying. It’s a labor-intensive method — but so worth it: a rich, honey-berry flavor with a creamy body and clean finish. Red Honey is the sweet spot: sweeter than washed, but cleaner than natural.
