Ethiopia Bishan Figu is coffee that smells like wild berries, violets, and has a subtle wine-like vibe. Its aroma feels like an early morning walk through a berry-filled forest, when the air is fresh and the sun has just touched the earth. The taste offers blueberry, mulberry, white wine, and violet notes, finishing with a lingering floral aftertaste. The body is medium — every sip flows smoothly and leaves behind a sweet echo.
This coffee comes from the Guji region, specifically from the Gambela area, where the Bishan Figu farm is located at 2200–2300 meters above sea level. The name "Bishan Figu" comes from the Oromo language and means "water that flows in the opposite direction" — a metaphor for the coffee itself: bold, different, unafraid to go its own way with processing and roasting.
At the Deri Bishan Figu station, young coffee trees grow. They produce fewer cherries, but each one is packed with flavor. Thanks to the high altitude and rich red-brown soil, the cherries ripen slowly, absorbing more sweetness and fruity complexity.
The coffee is processed using anaerobic fermentation: ripe cherries are sealed in oxygen-free tanks, where natural magic happens — yeast and bacteria break down sugars, creating a unique aromatic profile. This process brings out that signature berry-wine vibe, making it stand out among Ethiopian lots.
