Anaerobic fermentation with Lactobacillus for 72 hours gives it vivid tropical layers: pineapple, brut, kiwi, strawberry. The aroma reveals notes of passion fruit and dragon fruit. A syrupy body and fruity aftertaste are the final touch that makes every cup special — you know what we mean))
Freshly picked cherries are placed into plastic barrels where all oxygen is removed. The environment is completely anaerobic — but with the addition of Lactobacillus, “friendly” bacteria that trigger complex fermentation processes. Over 72 hours, a transformation occurs: the bacteria break down sugars, reduce pH, and enhance the cup with winey, fruity acidity.
This method doesn’t just preserve — it amplifies the coffee’s natural aromas: tropical notes emerge, the sweetness becomes more expressive, and you get that distinctive “brut” vibe in the cup.
This coffee is grown at an altitude of 1400 meters above sea level in West Java, Weninggalih. The processing happens right on the Frinsa Estate, run by Wildan Mustofa and his wife Atiek. Their first project began in 2010 and has since evolved into Java Frinsa Estate — one of Indonesia’s most technologically advanced coffee farms. They focus on clean washed coffees and innovative processing methods. Full control over every stage — from picking to shipping — allows them to produce lots with a distinctive and consistent flavor profile.
