After harvesting, the coffee cherries are placed in special bags for 10–12 hours. Inside, a natural process begins — as if the bean is preparing to sprout. The internal temperature rises, bacteria become active, and start working with the sugars in the pulp. This triggers fermentation, enhancing the coffee’s sweetness and flavor clarity. Afterward, the beans are shock-cooled in water at 8–10°C to stabilize their internal chemistry. Then comes sun drying, hulling, and vacuum packing. That’s how this coffee gets ready for its long journey to your cup :)
